REAGEN? Ammonia Assay Kit is a cuvette-basedenzymatic assay for the determination of Ammonia across a variety of foodsamples. The kit uses a spectrophotometric, kinetic assay to detect theenzymatic degradation of Ammonia directly from food samples.

Procedure Overview
REAGEN? Ammonia Assay Kit uses a coupled enzymaticreaction scheme to detect Ammonia in food samples. The ammonia is used as asubstrate by the enzyme glutamate dehydrogenase to make glutamate. In theprocess, NADH is stoichiometrically converted to NAD+. This conversion,measured at 340 nm, is proportional to the level of Ammonia in the sample.
The absorbance of each sample at 340 nm is measuredusing a spectrophotometer. The concentration of Ammonia in each sample is thendirectly determined from the change in NADH absorbance at 340 nm within 25minutes.
